Chhaya Raghuvanshi

Ingredients

  • 1 cup spinch leaves
  • 1 cup methi leaves
  • 1 cup radish leaves
  • 2 green chillies
  • 1 tbsp ginger
  • 1 small onion finely chopped
  • 1 small tomato finely chopped
  • 6-7 garlic pods
  • 1 tbsp coriander powder
  • 1 tsp jeera
  • 1/2 tsp garam masala
  • 1 tsp red chilli powder
  • 2 tbsp ghee
  • to taste Salt
  • For Corn meal pancake
  • 1/2 cup corn meal
  • 1/2 cup wheat flour
  • 1/4 cup yogurt
  • to taste Salt
  • Pinch baking soda
  • 2 tbsp Oil

Directions

  • Wash all the leaf well, take pressure cooker add leaf, ginger garlic, green chillies, 1 cup water cover the lid and take 4 - 5 whistle on medium flame.
  • After cooling down, open the lid and grind this leaves in grinder and make a fine paste, keep this paste aside.
  • Take a pan add ghee heat this ghee on medium flame, then add jeera let them splutter, add finely chopped onion, saute them till onion become pink in colo,
  • Now add finely chopped tomatoes, cook till tomato become massy.
  • Now add leaves puree that we have made
  • Add coriander powder, garam masala, salt mix all well
  • Cook this sauce on slow flame till it comes little thick consistency
  • Take a bowl add corn meal, wheat flour, salt and yogurt, mix well now add water make a batter like pancake consistency
  • Heat nonstick tava, add baking soda in batter, mix well.
  • Take a ladleful of batter, pour on tava spread it like pancake thickness,
  • Pour little oil on it, cook it on both side,
  • Serve hot with spinch sauce
