Coconut Pancake

Ingredients

  • For the Pancake batter -
  • 1/2 cup flour
  • 1 egg
  • 1/4 cup water
  • 1/4 cup milk
  • 2 Tbsp butter melted
  • as per taste Salt
  • as per taste Black pepper powder
  • For the coconut fillings
  • 1/2 cup grated coconut
  • 1 Tbsp castor sugar
  • 1 drop food colour

Directions

  • To make the pancake batter - in a bowl add a egg and beat, add flour and whisk. Add milk and water gradually and keep stirring. Add melted butter and stir. Add pepper and salt and stir well.
  • For the coconut filling - in a pan add grated coconut and add castor sugar. Stir to dissolve the sugar and add a drop of food colour. Stir and set aside.
  • In a non-stick pan add butter and add one ladle of the batter. Spread all across the pan. On low flame cook the pancake but don’t flip sides. Set aside after 2-3 mins. Complete the batches
  • To assemble add the coconut filling in the pancake. Roll and it’s ready to eat
