Lemon & Poppyseed Breakfast Cereal

Ingredients

  • 225 g gluten free oats
  • 3 tablespoons lemon juice
  • zest of 1 lemon
  • 3 tablespoons poppy seeds
  • 120 ml honey or maple syrup
  • 60 g coconut oil

Directions

  • Preheat the oven to 150 oC In a large bowl mix together the oats, lemon zest and poppy seeds
  • In a small pan place the lemon juice, honey/maple syrup and coconut oil Gently heat until melted and mixed together Pour into the dry ingredients and mix until the oats are coated
  • Spread out on a baking tray and bake for 15 minutes Stir oats and return to the oven for another 15 minutes
  • Remove from the oven and allow to cool Store in an airtight container
